Wheat malt is a base malt used for, among others, Witbier, Weizen, Wheat beer, and Wheat Ale. It is also used due to its high protein content to improve the foam stability of heavy and/or dark beers. Wheat malt adds a fresh and tangy touch to your beer. It can be used up to 60% of the grain bill, although a higher percentage may lead to filtration issues.
